This is a quick and easy to make recipe for Tanya's Oreo Cupcakes. I have been baking batches of these and they are delicious. So if you need a break from the mince pies and fancy baking something different to share with friends and family around your fire this Christmas, this one is for you.

Perfect served with a cup of steaming hot chocolate.

For the Cupcakes......
175g Butter
165g Caster Sugar
3 Eggs
40g Cocoa Powder
125g Self Raising Flour
1 Tsp Baking Powder
1 Pack Oreos

For the Frosting.......
2 Packs of Oreo's
100g Butter
200g Icing Sugar
Cupcake cases

1. Preheat the oven to 180 degrees. Fill baking tray with 12 cupcake cases.

2. Mix sugar and butter together until creamy and smooth. Make sure butter is at room temperature so it's easy to mix.

3.  Add 3 eggs. Mix.

4.  Fold in flour, cocoa powder and baking powder. Mix.

5. Place an Oreo at the bottom of each cupcake case. Fill up the cupcake cases with the mixture. Place an even dollop in each case so they all cook at the same time. Pop into oven. Cook for 12 minutes. Use a skewer to check they are cooked in the middle.

6.  To make the frosting, mix together the butter and icing sugar until smooth. Crush half a pack of Oreo's and stir in.

7. Spread the frosting over the top of the cupcake with a knife/spoon. Break an Oreo in half and push on top.

These are seriously tasty and a real treat over Christmas and New Year.
